When I was very young boy, admired my grandfather Mohammed harvesting the green and the black olives from our own olive trees in my hometown. We kept some of the olives for ourselves and took the rest to a nearby town to make Organic Olive Oil. There’s a very sentimental romance associated with the process -- picking the fruits with all our family, cleaning them of the leaves, bringing it to the mill to become authentic and all natural olive oil, and then storing the big bottles in the darkness for two years.

He was participating in this ritual since I was a young boy in his own orchard. Each stage from the picking, to the processing, to the storage brings me great joy.
